The food inside the Clay pot loses little to no moisture because it is preserved by steam, creating a tender, flavorful dish. Water absorbed within the walls of the pot prevents burning so long as the pot is not allowed to dry completely. Because no oil needs to be added to this cooking technique, food cooked in clay is lower in fat as compared to food prepared by other methods.
We aim to home-produce as much as possible for the best quality, and to reduce food miles. Our delicious cakes, traditional Devon scones, breads, soups, sauces and accompaniments are produced in our own kitchens – and we use herbs from our gardens when in season. Even our bottled water is produced in-house, using a sophisticated seven-stage filtration.
